Can another company see my customer data?

No. Every row in the database is scoped to your business by row-level security enforced at the database layer, not just the app, and tested directly against attempts to cross that boundary. No other company can see your customers, jobs, or invoices. You can export everything yourself, or request erasure, from Settings → Data & privacy. The full terms are public at /privacy and /dpa.
